Stuffed Whole Roasted Chicken

Whole Roasted Stuffed Chicken is must during Feast such as Religios Festivals , Christmas , Annivasaries , Birthdays and Pachpotnay”s day after the Wedding Celebration ,  Chicken Has always been the  best option for East Indian’ Cause  99%  Generally  are Chicken Roast Eaters

This Whole Roasted Stuffed Chicken has 2 options either you cook in the Electric Oven or you can do Pot Roasting , The process is easy and very simple ,If  its Oven simply Roast it in a      Pre Heated oven for 1 hour at 220 to 160 degree Temp , But incase you are Pot Roasting it’s a Slow cooking method where the Chicken is cooked in its  own juices For about 1 to 1 ½ hour

But the end result is Super Moist Chicken , Here the Stuffing is of chicken is Seperately Panfried comprising of  Liver , Giblets , Mix Vegetables, Raisins , Nuts,  Croutons and Diced Potatoes

This Whole Stuffed Chicken is basically a Side Dish We enjoy this with Biryani Rice or Fugias Accompanied with your favourite  Moile, Stew or East Indian Style Mutton or Chicken Curries


  
1 whole chicken with skin very important washed
Rub it with little bit of Salt 1 teaspoon  and Turmeric Powder 1 teaspoon   and set aside .

Stuffing Ingredients

2 finely chopped Small Onions
½ inch piece finely Chopped Ginger ( No Garlic )
2 to 3 finely Chopped Green Chillies
2 spoons of finely Chopped Mint Leaves
¼ cup Green Peas ( Boiled )
¼ cup finely diced carrot ( Boiled )
½  potatoe finely cubed  ( Boiled )
1 large Tomato Peeled , Skinned and finely chopped
Chicken Liver Gizzards & Heart finely diced into tiny pieces
1 juice of 🍋 Lemon
Ghee for Roasting 150 gms
Salt to taste
1 teaspoon Sugar
½ teaspoon Cinnamom Powder 
½ teaspoon Crushed Black Pepper Powder
2 tablespoon Golden Brown Raisins
1 tablespoon broken Cashewnuts
3 slices of White Bread cut into small cubes browned in ghee like  Crutons & set aside
Almonds , Bacon , Raisins , Cashewnuts
These are optional if you wish to make your Stuffing more rich please add them  


 Step to Make Your Chicken Stuffing 

Take a pan heat some Ghee in it
Start with Onion fry till light brown
Then add Green Masala such as  Ginger & Green Chillies 
Add Pinch of  Sugar / Peeled Diced Tomato / Mint / Liver / Gizzards/ Heart
Fry until thoroughly cooked
Then add fried Bread Croutons  
Add Dry fruits of your choice if needed
Add Crushed Pepper Powder/ Cinnamom Powder
Dash of Lemon Juice
Stir Fry Mix well remove then allow the Stuffing Masala to cool


2  Methods  Of  Roasting The Chicken

Here you have 2 option either you can Oven Roast in Electric Oven
Or you can Pot Roast In a Non Stick Vessel which has got Lid on Top

Incase you are Oven roasting then you can stuff the chicken with chicken stuffing inside the cavity  Not Too Much and sew it up with Needle and Thread  , Apply some melted  Ghee to the chicken skin from all sides  Place the whole stuffed chicken on a greased baking tray over dripping grill bake it in a preheated oven 220 degree to 160 degree temperature for 1 hour ,

But incase you are Pot Roasting please do not stuff the chicken simply place the Hollow Marinated Chicken with Turmeric and Salt  Add some Ghee and Pot Roast in the Vessel with covered lid for about 1 to 1 ½ hour on very slow flame without adding a single drop of water 
When you see the Chicken is almost cooked
Open the lid and Roast the Chicken in that same vessel by turning the Chicken on its sides with the aid of spoon and fork , Colour & Brown it from all sides

Once its ready place This Roasted Chicken  on a large platter
Get rid of the thread attached to its belly
Serve whole chicken if you like or you can even chop into pieces or Shred it  for the guest displayed on a Large platter
Garnish with Chicken Stuffing On Its Sides
Serve This Royal Dish as a Side Dish Enjoy it with Biryani Rice or Fugias Accompanied with your favourite  Moile, Stew or East Indian Style Mutton or Chicken Curries
