East Indian Style Chicken Roast

Chicken Roast East Indian Style a delicious dish flavourful and bit spicy as the name suggest is fiery tangy preparation which gets its flavours from roasted Aromatic Garam Masala Spices cooked in Ghee    Yes Ghee which goes into it and this is what makes it so Sumptuous, This Dish comes into mind especially during festive Seasons such as Christmas , New year , Easter or  East Indian Weddings 
      

1 whole Chicken
Cut into medium size pieces and throughly wash it thru water
Set aside to drain of all the excess water.

Once this Chicken meat is drained of with water
Marinate this chicken pieces with the ingredients listed below  for about 2 hours before
You place it on flame to cook it .


Required  Ingredients & Marination Process :

You squeeze 1 full lemon to it
 some use homemade vinegar but I my case I use only 🍋 juice for Chicken Roast
Add 5 to 6 whole Elaichi’s
2 sticks Dalchini
6 to 8 Cloves
8   Whole Red Kashmiri Chillies soaked in water soften once
2 roughly chopped Tomatoes ( the reason I use Tomatoes in my roast it because it avoids drying up the dish it helps roast to retain all of of juices and goodness in the gravy , without tomatoes the Chicken Roast would turn up dry )
1 Tea spoon additional Fresh Garam Masala
1 tablespoon Salt
3 tablespoons of  Dalda / Ghee

Take a vessel in which you are going to cook your dish or you can use a glass bowl to keep your marinated Chicken  

Directly place the Drained Chicken pieces in this vessel or Bowl  

Add all of the above ingredients and slowly and gently mix it with a spoon or bare hands to marinate the chicken pieces from all sides 

Leave this chicken meat to marinate In all of this ingredients  for 2 hours atleast
once you have given that time


Method Of Preparation :

Place this  vessel Directly  on medium flame 

And cook with close lid in the beginning with water on top of lid

Chicken cooks faster hence you keep a watch that it doesn't overcook

when you realised its almost cooked that’s when you  

Take of the lid and allow the water to evaporate 

This will finally give that golden roasted looks for your Roasted Chicken

At this point you can add 1 tablespoon of Dalda / Ghee 

Add bit more Salt 

Squeeze more lemon juice or Additional pinch of Garam Masala 

Get that Salty  Soar Lemony Taste To your Roasted Chicken 

Once you are satisfied with your Chicken Roast  

Remove and serve as your Side Dish 

It goes best along with Fugias and any Meat Curry of that day 

If not Fugias , Handmade Rice Rowtys  ,Naram or Kadak Pav is also the next best option .
