Ghaboli Fry / Pala Fish Roe Fry

Ghaboli fry has always been my favourite since childhood. I use to wait for the rains to come because i knew we get this particular fish and the fish roe during Rainy season..We always have this during rains as long as it is available in the market even though the price is too high.There are many fish whose eggs taste good but i love this particular Fish Roe..Even though the fish has lots of thorns its very tasty..Yes you guessed it right its Pala Fish ..

These Panfried Gaboli In Green Masala makes really a great Appetiser or served as Side Dish  , If the aroma of the Gaboli  doesnt knock you off your feet, The taste definitely will .

Why Boil The Gaboli 

2 Large size Pala Fish Ghabolis / Fish Roe
Wash the Ghaboli well be careful as it may break wash it gently but clean.
Now you may wonder why cant we directly apply Green Masala and Fry these Gabolis , Why is it that we need to Boil , Well the answer is simple if you directly apply the green masala and try to pan fry your Gaboli , Since these are Fish Eggs the moment these tiny eggs come in contact with hot oil , Your Fish Roe will start to splatter and Popping of the Eggs will take place , You will find it very hard to handle and keep Gabolis in shape , Hence its very important to Boil The Gaboli first in some water mixed with Turmeric , Vinegar and bit of Salt
   
For Boil add
½  cup water, Bit of Turmeric with a Dash of Vinegar and salt to taste on a medium heat till all water evaporates.


Green Masala to Ground 

1 Cup full Fresh Green Coriander leaves
4 to 5   Fresh Green Chillies
1 inch piece Roughly chopped Ginger
6 to 8 cloves of Garlic
½   Teaspoon of  Turmeric Powder
Salt as per taste
2 Teaspoon Gram flour ( Besan)
Juice of 
½  a lemon or  Lime
2 to 3 Tablespoon of Oil
Grind to paste the above Green Masala
Add Besan and Lime juice Salt Mix well    
Grind Ginger,garlic,chillies,coriander to a smooth paste..it should be thick and not watery as we need to coat the boiled Ghabolis.
             
Cut into medium thick slices of boiled Gaboli ,  Apply to Gaboli  coat it well from all sides and  keep to marinate for 3 to 4  hours  



Method Of Preparation : 

Heat a non Stick big sized Pan on Medium heat 
Add 3 to 4 tablespoon of Oil until smokey hot  
Lay out the Gabolis in line with the pan                                                                                
On medium heat pan fry these Marinated  Gaboli  in Green Masala                                          
From both sides  until lightly golden browned   
Remove and serve and enjoy these Fried Gaboli  as Side Dish along with Bhaji , Dal , Prawn Curry , Steamed Rice or Rice Rowtys
