East Indian Style Mutton Paya Curry In Bottle Masla

Paya Curry is usually enjoyed during winter seasons as its considered to be heaty its perfect during cold seasons , This paya curry is simply yummy goes very well with Brun Bread as we popularly call it Kadak Pav in Bombay , But for me its best goes with Handmade Rice Rowtys


6  Goat Trotters completely washed and cleaned ,Pat Dry them with dry cloth , Hold them directly on  Live gas burner to burn of the excess hair incase its still holding on the feet
Each Feet chop it  into 2 pieces , In total 12 pieces good enough for family of 4 persons
 Ready your Pressure Cooker
Add 1 cup of Warm Or Cold Water    
Add ½ teaspoon of  Turmeric Powder
Add 1 ½  teaspoon of Salt  
This Paya Goat Trotters you pressure cook it on low heat
For good 40 minutes that’s around 7 to 8 whistles
These Payas have to be literally thoroughly Cooked until very very Soft
Cook  until the Meat  is dropping off the bone
You Must feel the Gelatine the Meat Stock on Sticky side
Set This Cooked Paya along with the Meat Broth  aside very very important

Grind these 4 ingredients in a mixer
Heat a pan add bit of oil then Bagar the below ingredients starting with
100 gms onion
1” piece of ginger
2 to 3 green chillies ,
And little bit of fresh Green Coriander leaves
Then finally add 2 tablespoon full of Bottle Mutton Masala
Grind it into a smooth paste in a Mixer

Additional Ingredients for Paya Curry  
1 whole Pod Smashed Garlic Cloves
A marble size ball of Tamarind diluted in water
2  tablespoon  of  Rice Or Wheat flour diluted in water
Salt to taste
2 to 3 Tablespoon of Oil

Method Of Preparation :
Heat a vessel on medium heat
Add to it 2 tablespoon of  Oil
Drop your Smashed Garlic Cloves  and fry until soft & light golden colour   
Then add your   Ground Masala  and fry very nicely on low to medium Heat .
Next add the Boiled Cooked Goat Trotters along with all of its Broth.
Add Salt to taste and cook on low heat   
You can add bit of water to make bit of gravy make sure your gravy is on thicker side  
Cook  Further until the  Bones have soften and Meat is dropping off the bone.
Now at the end to thicken it you can add little bit of Rice or Wheat  flour diluted in little water     ( but this is optional )
Once cooked Serve this Mutton Paya Curry  Hot
It Goes very well  with Aapas  made East Indian Rice Rowtys  or Kadak Pav
