Whatever you may call
it Snacks , Nugget Starter or Croquettes ,Originally it's Origin is from Russia
where they call it Russian Chicken Cutlets
400 gms boneless
chicken
2 Medium Size Potato
boil them , peel off the skin then with Vegetable Masher Smash it to form thick Puree keep this aside
( This Potato can be optional you may add if you like or else you can simply
skip it )
1/2 liter Oil for
deep frying
1/2 packet of White
Thin Sevaiya Vermicelli crumble it with your hands and keep it aside later to
coat it
Finely Handchopped Veggies :
25 gms Green capsicum
50 gms Fresh Green Chillies ( For Spiciness )
25 Yellow or Red
Capsicum ( For additional Colour )
50 gms white onion
1/2 Pod Garlic
1/2 inch piece Ginger
1/2 cup green coriander leaves
Seasonings & Binders :
4 gms Salt
1/2 teaspoon white
pepper powder
1 tablespoon Curry or
Kebab powder Shan , Everest Or any other brand that’s available in india
)
1 teaspoon Red
Kashmiri Chilli Powder
1 teaspoon Cumin
Jeera Powder
1 portion of beaten
Egg
1 tablespoon Cornflour
50 gms bread crumbs
Garnish & Sauce :
Shredded Lettuce
Leaves or Shredded Cabbage
Tomato ketchup ,
Mayonnaise Cocktail Sauce , Szechuan
Chutney or any other sauce of your choice as Dipping
Method Of Preparation :
First of all wash the
boneless chicken drain all of excess water pat dry with dry paper towel or dry
cloth
Then In a electric
mincer or chopper mince the boneless chicken into a thick paste
Then transfer all of
this minced chicken meat into a dry glass or steel bowl
Then one by one add
all of the hand chopped veggies to it together with Mashed Boiled Potatoes
incase if you are adding to it
Along with it all of
its seasonings and salt egg , bread crumbs , cornflour
Mix all of this with
your bare hands to thoroughly incorporate all of the ingredients atleast for 4 to 5 minutes
Then give shape of a
ball round it up on your palms dipping your hands in little water
Shape them into Small
Balls round up throughly from all
sides , Lay them on a flat
dry plate
In a separate Plate
place your White Crumbled Vermicelli
Then one by one coat
these Chicken Croquettes with Vermicelli from all sides
Then pour at least
1/2 liter of Oil in a Frying Pan heat throughly 300 degree in Temperature
before immersing these Croquettes
Once you drop them
reduce the heat to medium and Fry for just about 7 to 10 minutes until it's nice and golden brown from all
sides
Place these Chicken
Croquettes Coated With Crisp Vermicelli on shredded lettuce or cabbage
Serve this
Russki Starter with Mayonnaise Cocktail Sauce or with any of your Favourite Sauces or
Chutney
