Fresh Kolim These are Nano Microscopic Shrimps caught with the help of Saree or Dupatta,s on the Banks of Salted Creek Khadi around the shore lines of Mumbai , As soon as they are Fished they are sold fresh by these specific fisherwoman who then come to sell at your doorsteps
East indian Kolim wada's , It's a unique Delicacy you won't find it in any part of the world it's available only here in Mumbai and it goes Awesome with Handmade Rice Rowtys , Naram Pav or Karak Pav , You can tuck these Seafood Rissoles in your Naram pav or Kadak Pav and relish it like Sliders too , Just One is not going to be enough Each one devours at least 3 to 4 , hence we end up driven out of the kitchen by our Moms
Kolim is one of the tiniest version of shrimps some call it Kharin cha Kolim , some call it Khara Kolim Some call it Saree Cha Kolim , Some call it Balchao , Sungat , Kirill too
And I call it Tezalin Cha Kolim
This Seafood Delicacy is one of the Rarest it's hard to find even on search engine such as Google  So here is the recipe I'm happy to share with you all .
You so get this in Orlem fish Market. Linda and Nora from Kharodi always has this in their daily selling table.
it's available now at Sewree market. Well packed in airtight packaging
Trombay , is another place where you can find it
you can get it in the Saturday market in Virar west too .

For 6 to 8 pcs of wada's you need 1 cup of Fresh Kolim


The Cleaning Process Of Fresh Kolim :
Place this kolim on plate and clean it with your bare hands if you see anything thats unwanted get rid of it
Never wash it , you will end up all your Kolim in sinkhole drain

Ingredients Required To Make Wada”s 

The next step is to to cut finely chopped ingredients to add to this Wada's
4 finely chopped Green Chillies
6 cloves of finely chopped Garlic
1 inch finely chopped Ginger
And handful of finely chopped Green Coriander Leaves
Add just 1 teaspoon of East Indian Homemade Fish Masala to it
Then add 1 cup cleaned Fresh Kolim and slowly mix it to incorporate all ingredients at this point Add the amount of Salt you think you need
Then divide this into 6 to 8 portions and give it a shape of Round Patties




Method  Of  Pan  Frying :

Heat a Frying Pan add 2 to 3 tablespoon of Oil and on slow to medium heat
Pan fry this Kolim Wada's , Fry just to colour it Deep Brown from both sides
Remove and serve these Kolim Wada”s Seafood Delicay as your Side Dish while they are Hot Especially with Rice Rowtys or Naram Pav
