Methi Chi Bhaji

Fenugreek leaves popularly known as Methi possess a great deal of medicinal value and is one of the important ingredients in an Indian household. It is known to possess anti-diabetic, anti-bacterial and anti-oxidant properties.
While the fresh leaves are more preferred option and has a bitter taste, the dried leaves and the seeds are also known to have a widespread usage in Indian cuisine. Also known by the name of Bird’s foot and Goat’s horn it is cultivated on a large scale in India and North Africa.
In India, fresh Methi leaves are used in several different recipes like Methi  Malai  Matar, Methi chi Bhaji,  Methi  Besan , Methi  Dal Fry, Aloo Methi  etc.
It’s a simple stir fry dish adding Onion Green Chillies and Beaten Egg  not adding any  spices    It  helps to retain and keep the original flavor of this vegetable  


Ingredients  Required : 

5 bunch of Fresh  Methi  Leaves  ,Wash it thoroughly chop the roots to discard it 

The good part of Methi  Leaves roughly chop it and set aside to cook  

2 finely Sliced Onion 

3 roughly chopped Green Chillies 

Required amount of Salt 

3 tablespoon of Oil 

2 Beated Egg in  a Bowl  ( optional Some even add Sukka Dry Bombils to this Bhaji ) 
 
Method  Of Preparation :  

Heat a vessel add good 3 tablespoon of oil to it 

To which you first add 2 finely chopped  onion sauté until succulent and transparent 

Then add finely chopped  3 green chillies sauté until soft 

Then add  above Roughly chopped Methi Leaves 

Mix is slowly and incorporate slow and steadily 

Add required amount of  Salt 1 teaspoon 

Methi  leaves as it begans to cook it leaves good amount of water so on slow fire cook until all water dissolves as soon as you see water and oil separating  

Add  Beated  2 eggs 

And with wooden spoon mix well avoid forming lumps 

Once you see the consistency like its in the picture remove and serve with Chapatis or Handmade Rice Rowtys
