Amphade is basically same as that
of Moile except you add Coconut Milk and ½ a teaspoon of Garam
Masala at the very end to enhance its taste
You can take any fish of your
choice Bagra / Surmai / Rawas / Masa
Ive used small Baby Bagra Fish 12
pieces / if they are large you can use just 4 pieces
But incase of 1 small size
Pomfret
Clean and Trim the Pomfret or any
fish of your choice
Slice the Pomfret or the other
kinds of fish into pieces wash
Apply 1/2 Teaspoon Turmeric
powder 1/2 Teaspoon Salt let it rest for about 10 minutes
Then shallow fry those pieces of Fish
in 2 to 3 tablespoon of Oil and set aside
Ingredients Required :
Get this cut masala ready ( cut
length wise )
3 Onion thin rounds sliced or halves
1 large size Tomato finely sliced
3 to 4 Fresh Green Chillies
vertically cut
½ inch piece Ginger
Juliennes
8 flakes of Garlic Juliennes
½ cup finely chopped
green coriander leaves
1 to 2 spoons of Lemon juice or Vinegar
to taste
1 tablespoon raisins
2 teaspoon
Bottle Masala
½ teaspoon Garam
Masala
½ cup Extracted Coconut Milk Thick
3 Tablespoon of Oil
Method Of Preparation :
Heat a vessel add 3 tablespoon of
oil to it
On medium heat
Fry the onions first fry until
soft and as soon as it sweats
Then add Ginger And Garlic also
fry until soft and light golden brown
Then you add up fresh green
chillies fry them too until soft and
fried
Make sure to keep your flame on
slow medium heat
so as not to burn the ingredients
or brown them
Fry all of these masala e nice
and light browned
Then add the sliced tomatoes cook them until soft and pulpy
Then add the raisins and fry and
with the spoon smash it and crush them along with this masala
Then add up Bottle Masala saute
and fry until Flavour erupts and Oil separates
Then add half a cup of water or
as per your requirement
Add lemon juice or Vinegar and
Salt too as per requirement
After adding up all this
Add ½ cup of Extracted Coconut Milk Give a gentle stir
Let the gravy simmer for few
minutes
Then finally add the Fried fish
and allow to cook for 4 to 5 minutes
Once done you sprinkle ½ teaspoon of Garam Masala to enhance the Fish Amphade
Top it up generously with finely
chopped green coriander leaves
Switch off the gas and allow the
Fish Amphade to settle for about 15 to 20 minutes to catchup with all its
flavours
Once ready serve it with Hot Rice
or Handmade Rice Rowtys .
