Gaothans call it Bhokache Vare some call it Worias while I call
it Waras
This Deep Fried Sweetish Doughnut shaped like Breads is Very
popular in every East Indian Wedding Homes and during feast such as Christmas
or Easter Its prepared in huge
quantities for all invited guest especially on Wedding Days and smaller
quantity for small Families
My reciepe quantity is for small
family with 4 to 5 members
Ingredients Required
2 Cups Wheat Flour ( It's Original ) it's bit heavy but that's the
way it is
Some add Maida to make it light and spongy so this is optional
½ cup white Urid Dal soaked
and pureed in mixer
¼ cup Besan Chana Dal flour
( Many other Worias reciepe doesn't contain Besan but in this reciepe I've
added , you can skip this Besan if you like it)
½ cup Rice flour
Pinch or Required amount of Salt
100 to 150 gms of Jaggery melted and diluted in hot water (
originally)
But some even use Normal sugar to it to make it bit Sweetish
While others don't add at all so it's up to you how you like your
Worias sweet or Non Sweet
15 gms / 1 Tablespoon dry instant yeast Diluted in Luke warm water
Required amount of lukewarm Water
30 gms melted Ghee
Method Of
Preparation
Mix all of the above ingredients adding very little warm water to
form a thick batter and leave this dough to ferment for at least 4 hours if the
quantity is small , but incase it's for
large numbers big crowd then leave it to ferment overnight stored in warm place
The Next Day
Heat your kadahi with sufficient Oil for deep frying purpose
Then dip your hands in a bowl with water
Place 50 gms dough ball on
your wet Palm
Make Flatten Rings with your middle finger
Make a hole in center like you do it for your Doughnuts
After every 2-3 Worias wet the palm of your hands
So that the Worias will slip out in hot oil easily
Deep fry these Worias until deep golden from all sides
Serve them preferably Hot
These Authentic East Indian Sweetish Bread goes very well
especially with Meat Curries such as Stew , Indiyal , Roast , Moile and Foogath
