The East
Indian Community are the Original Inhabitants of Mumbai , Thana , Vasai and
Raigad District . This Traditional East Indian Wedding Carrot & Papaya
Pickle Reciepe is carried out from
Generations to Generations for hundreds of years , This special mouth watering
and tasty pickle is served during East Indian Weddings
This pickle can be made any
time of the year because this pickle helps digestion.So go ahead and try this
recipe very healthy easy to make and extremely yummy
Required Ingredients:
250 gms
carrots
1 small papaya
around 300 gms (raw)
2 bits ginger
2 pods Garlic
Flakes ( Whole )
100 gms. Green
chillies ( Bhawnagri )
100 gms. Dried
dates can be shredded or kept whole
2 inch fresh Turmeric
powdered ( while maturing the pickle )
½ teaspoon Turmeric
powder ( while drying the veggies )
25 gms mustard
seeds ( pounded or crushed coarsely )
2 cup approx. ½ liter Apple Cider Vinegar or Synthetic
Vinegar ( add as per taste )
Method Of
Preparation :
Slice the
carrots, papaya and ginger into thin rectangular strips
Apply ½ Turmeric powder , Salt to above carrot
papaya & ginger
And let them
dry in the sun for 2 to 4 hours.
Soak the Dates in ½ cup of
vinegar for 1 hours.
If the Green Chillies are
big then cut into quarters.
Add another 1 ¼ cup of vinegar into the kadai
2. Now add the vinegar in which the dates
were soaking.
Bring this to full boil
Then add the
Green Chillies and Garlic stir for just 15 seconds
Then
Immediately switch off the gas then let
it cool.
Then mix the
above with Fresh powdered Turmeric , Mustard seeds (pounded and husked)
Stir to mix
well
Transfer the pickle into a glass / ceramic
bowl or container (wide mouth).
Cover and set it aside for 3 days.
Every 12 hours stir it once so that the vinegar
mixture coats all the vegetables
Now that your pickle is
almost done transfer this into a pickle jar
And set aside for 2 more days
to mature.
On the 5TH day Your East
Indian wedding pickle is ready for consumption.

Please Note :
Here vinegar helps as the agent of preservative.
There is no oil so it is again health conscious
recipe.
Container used to store should be completely dry
no moisture should be presence and also see that it should be airtight or
pickle will get fungus.
This pickle contain carrots good for eyes,
papaya good for digestion, turmeric fresh and also powdered good agent
for antibiotic.
