Vajri also known as Tripe
Ask the younger generation of East
Indian Community Nowadays and many of them Might say they don't know how to
cook , The traditional Vajri Curry some of them even laugh at the fact that
Vajri is that of a Goat stomach and
intestines
Vajri apparently not Many of them
know how to make It's East Indians Top Most Traditional delicacy it's only when
you you taste it we realize that it's awesome and quite amazing in taste
especially when you relish Sukkah Vajri
with Hot Handmade Rice Rowtys And Vajri Curry With Chawli goes well with
Steam Rice
Here I'm sharing with you recipe of Sukkah Vajri with Roasted Coconut in Bottle Mutton
Masala
The Vajri Cleaning Process :
The best process is to clean it
with boiling water
Here I use Small Goat Vajri which
is small in size plus it's tender we get this in any local Mutton shops they are pretty good and results is great too .
But incase you are using Big sized
Vajri then pls adjust the ingredients quantity accordingly
First of all wash the Goat stomach
and Fayr ( Fatty Goat Intestines) throughly under cold water remove and wash
all impurities that's in the stomach and Fayr Intestines slit them with
scissors and clean it really really well even it means 6 times through water
Then cut this Vajri into Palm
sized pieces
Prepare Hot boiling water insert
only these Cut Vajri pieces
One by One and keep cleaning and
removing the dirt on One by One basis
( Do not add the whole Lot pls
don't do this mistake )
Scrap the black surface until it's
white
You don't have to dip Fayr Goat
intestines into boiling water this can be washed under cold water keep that
aside
Then to further Blance and clean
it Some use plain Flour they sprinkle it over these cleaned Vajri and clean it
to get rid of any leftover smell
Once you have done this wash it
one more time
Then cut this Vajri and Fayr into
small bits ( pls don't cut into medium or large pieces )
For one final time wash everything
throughly under cold water and leave it to drain of it's excess water
Ingredients Required To make Sukkah
Vajri
1 Onion finely sliced
2
to 3 finely chopped Green Chillies
1 Tomato Finely Chopped
1/2 inch sliced Ginger
4 to 5 cloves of Garlic
Pan Roast the above ingredients
then Grind it to Course Paste in Mixer
Seperatly take 1/2 fresh wet
Scrapped Coconut on a dry pan drizzled with few drops of oil Bagar it on slow 🔥 flame until light golden brown , keep this
Roasted Scrapped Coconut to be added at the end
¼ teaspoon Rai Black Mustard Seeds
Few twigs of fresh Kadi Pata Curry
leaves
2 to 2 ½ tablespoon Bottle Mutton Masala
Water as per requirement
Salt as per requirement
1 juice of whole lemon
Handful of freshly chopped green
coriander leaves
Thick Slices or Red or White Onion
Rings
And couple of Lemon Wedge to
relish along with Sukkah Vajri is a must
Method of preparation :
Heat a vessel
Add 3 Tablespoon of Oil
1 Onion finely chopped saute and
Fry until oil seperates and golden brown
Then add Rai black mustard seeds Fry until it crackles
Then add few Twigs and leafs of
fresh kadi pata Fry until crispy
Then add the above Ground Masala
Fry well bagar it nicely until oil seperates and masala cooked
Then add Bottled Mutton Masala Fry well don't let it
burn
Add 1/2 cup of water if you have
to
Then add your washed Vajri and
Fayr also Mix well Saute throughly until
it incorporates With all of the Masala
Add sufficient water ( if it's
sukkah then add little water )
Add required amount of Salt
Then add 1 whole juice of 🍋 Lemon
Finally add the Grated Roasted Coconut to thicken
your gravy
Cook until Vajri is throughly
cooked with closed lid , slow down the 🔥
flame and let it simmer for 5 minutes
Top it up with Finely Chopped Green
Coriander leaves
Serve this Out of the World Dish
with Hot ✋ Handmade Rice Rowtys Accompanied with thick
slices of White or Red Onion Rings and a lemon wedge
