It is quite a
popular dish in coastal regions such as Mumbai , Karnataka and Goa. This dish
is very easy to prepare. The cooking hardly takes time.

for 6 months time , like we do and stockup our Bottle Mutton Masala and other Masala’s
We make sure
to Stockup up on all those Dried Fishes that each family Curry favours
Sukkhe kardee
, Bombil , Mandeli , Surmai , Bagra , Jawla , Tendli , Pomfret
When you don’t
have fresh fish available during bad
monsoon days , And feeling lazy to cook , we simply dig in these preserved Goodies
that we stocked up for our rainy days .
Sukkhe Kardi
is usually Served as a Side Dish or we Simply eat it with Hot Chapatis or Handmade
Rice Rowtys
Ingredients :
100 gms Dry Kardi Washed and Soaked
in water
3 large Onions Roughly sliced
4 to 5 Green Chilles slitted
lengthwise
2 Peeled Potatoes sliced Fine in
quaters
1 small bunch of freshly Chopped
Green Coriander leaves
1 Teaspoon Turmeric powder
2 Teaspoon Red Kashmiri Chilly Powder
( you can add more if you wish to
make it more spicy )
Sufficient Oil for Pan Frying 3
Tablespoon or more if you have to
Salt to Taste
Just prior to Frying :
Take a bowl squeeze the soaked
Kardi with your bare ✋ hands separating all of the water from Kardi and put this Kardi into this
bowl to which you add Roughly Chopped Onions , Finely sliced Potatoes , slitted
Green Chilles , Turmeric powder , Red Chilli Powder , Salt and Couple of Spoon
of Oil too except for Fresh Coriander leaves Mix all of these ingredients
gently with your bare hands and leave it aside for 15 to 20 minutes to catch up
all of it's flavours
Method Of Cooking :
Heat Bit Of Oil in a Frying pan
when the Oil gets Hot
Add the above Mixed Kardi along
with Onion, Potatoes & Green Chillies
Cover this Pan with the Lid and on
Slow 🔥 flame cook it , Keep stirring at regular
intervals
Until the Onions turn transculent
and potatoes Cooked
Only when you are sure these
ingredients are well cooked lightly Browned
Add Required amount of Salt once
again if you have too add more Chilli powder if you wish
When it's finally Cooked you get
this Feiry Red Colour to your Kardi Fry
Top it up with freshly Chopped
Green Coriander leaves
Stir and remove from Fire
This Sukkhe Kardi Chilly Fry goes very well with ✋ Handmade Rice Rowtys Accompanied with your
favorite Bhaji
